Beans and Ham Soup

Old fashioned beans and ham soup. So delicious! Just need a slice of corn bread! Makes a bunch and freezes well!

Ingredients

    Directions

    Equipment needed: 10 to 12 quart stock pot.

    Step1

    Remove ham seasoning packet, rinse beans and drain in a wire mesh strainer, some of the beans are small.

    Step2

    Pour beans in a pot and cover them with water and soak them 8-10 hours, overnight.

    Step3

    Dice onions, carrots and celery and combine them in a large pot with 2 tablespoons of olive oil on medium high heat. Sauté for a few minutes.

    Step4

    Drain beans and add them to the pot with 4 cups of vegetable broth and 4 cups of fresh water. Add seasoning packet that the beans came with, garlic, mustard powder and bay leaves. Add in ham hock bone. reduce heat, simmer covered for an hour stirring occasionally.

    Step5

    After 1 hour remove ham hock bone and add the 3 cups of ham. Cook on low for 30 minutes to an hour or until vegetables and beans are tender. Add salt and pepper to taste. remove bay leaves. For thicker soup use a potato masher to mash some of the beans and soup then stir. Serve and enjoy!
